I am trying to create my first album. I understand there is a drop down menu but I don't see it.

Click the icon on the far right:

You can then choose 'New Album' from the drop down and enter the name in the field to the right.

are we able to change the name of an existing album?

Yes, if you open the actual album and then click the same icon, it will let you edit the details.
