Description:
A seriously yummy alternative to chocolate fudge. But be aware - this is easy to screw up!
Other: Ingredients:
Time:
30-40 minutes
Difficulty:
Easy
Serving Size:
9-12, depending on how you cut them.
  1. 3 cups white sugar
  2. 3/4 cup butter
  3. 1 can (5-6 oz.) evaporated milk
  4. 1 teaspoon pumpkin pie spice
  5. 1/2 cup solid pack or pureed pumpkin (NOT PIE FILLING)
  6. 7 ounces marshmallow creme (or melted marshmellows)
  7. 1 teaspoon vanilla extract

  8. Optional:
  9. 1 cup chopped pecans
  10. 12 ounces butterscotch chips
Preparation:
  1. Saucepan.
  2. 13 x 9-inch baking pan, buttered.
  3. Candy/sugar or deep fryer-type thermometer.
Instructions:
  1. In the saucepan, place sugar, butter, milk, spice and pumpkin.
  2. Cook over medium heat.
  3. Bring to boil, stirring regularly until it reaches 232-3F/110C (about 20min - should have a soft ball).
  4. Take off heat and stir in marshmallow creme and vanilla.
  5. Optionally, stir in the butterscotch morsels and/or pecans.
  6. Mix until well blended.
  7. Pour quickly in the greased pan, spreading evenly.
  8. Let cool, then cut into small squares.
  9. Seal tightly in like a tupperware container and keep at room temperature.

If you've made fudge, then you should have no trouble with this because it reaches the same consistency as regular fudge during cooking.

Oh, and this is my celebratory "I did good on my new job today" recipe post.

Editing to say I only just noticed the level of difficulty is set to Easy, but I know I selected Medium when I posted this (and it is a medium sort of cooking effort). I'd rather not go back and edit it, though, as I'm loath to have to reset everything through the recipe interface just to get all on single lines and so on.
