Vegetarian Bieroks (or Runzas)

Description:
cabbage, onion & "meat" filled rolls. alot of this is guesstimation as idon't follow a recipe and make from memory.

Serving Size:
makes 12 with some filling left over
  1. 1 box of boca crumbles (all 3 bags)
  2. 1 medium onion, diced fine
  3. 3 cloves of garlic, minced
  4. 1 tbl of sugar
  5. 2 tbl balsamic vinegar
  6. 1-16 oz bag of shredded cabbage
  7. 1/4 cup of water
  8. 1 package of 24 Rhodes multigrain rolls, thawed in the refrigerator overnight.
  9. shredded cheese of your choice.
Preparation:
  1. preheat oven to 350
Instructions:
  1. saute the onion in a little olive oil until soft. add three bags of boca crumbles and mix well. add garlic, sugar & vinegar & mix again. add shredded cabbage mix & water, toss well, cover & steam on low for 15 - 20 min. - until cabbage is translucent. when sufficiently steamed, remove from heat & set aside.
  2. put two balls of multigrain roll dough together & roll out to a 6 inch circle. place a bit of shredded cheese in the center then a 1/4 of a cup of filling. pull the sides of the dough up and together to make a little pouch and put seam side down on a greased cookie sheet. rub tops with melted butter and bake for 30-35 min in a 350 degree oven.

This sounds really yummy, but can I ask about a couple of the ingredients?

First, what are Boca Crumbles? Second, the roll dough you're talking about I assume is bread dough?

I'd have to make the dough from scratch, (which is not a problem for me) because we don't have ready-made bread dough in Australia. Cookie dough sure, but not bread - yet!

Boca Crumbles are made by Boca. they are an alternative to ground beef . yeah, i was speaking of frozen bread dough...ummm my mom always used a package of hot yeast roll mix when she made hers (and ground beef) and my grandmother made her own bread but i was never privy to that part of the recipe either. no one has it written down, actually, lol. i have used shortcuts after seeing a recipe for Runzas on the Rhodes Bread Dough site and adapting my mom's family recipe to it. the addition of sugar & vinegar are really the only fundamental differences between the two. in my rambling way, i guess i am saying i have no clue how much bread dough to tell you to make. the two rolls i use make a 2-1/2 or 3 inch ball of dough....

OK, I had a feeling it was a meat replacement type thing, that's cool as there are plenty of that kind of thing in Aus and while I would prolly also make the meat version, I have several vego friends who would really like the non-meat version.

As to bread dough - meh, leftover bread dough never goes to waste in our house, I'll just make a standard loaf-size batch and see how it works.

Just found this smilie (had to reduce the original number of frames to get it to upload here) and I HAD to use it in this forum:

haha! that's awesome.

the meat sub version i actually tried for the first time tonight, using my family as guinea pigs. they loved them. in fact, the hubby forgot they didn't have real meat in them.
