Christmas Red Cabbage

| Description: This was one of my side-dishes with my Christmas Dinner this year.

| Time: 30 minutes Difficulty: Easy Serving Size: 4-6 | - Half a red cabbage
- One large cooking apple
- 200ml vegetable stock
- 1 cinnamon stick
- 1/2 inch fresh ginger root

| Preparation: |
- Chop the cabbage finely
- Peel, core & chop the apple into small pieces
- Peel & grate the ginger root.

| Instructions: |
- Put the cabbage, apple, cinnamon and ginger in a pan. Add the stock. Cover and bring to the boil.
- Stir and simmer for 20 minutes, or until the liquid has reduced and the cabbage is soft.
- Remove the cinnamon stick before serving.
