Christmas Red Cabbage

This was one of my side-dishes with my Christmas Dinner this year.
Other: Ingredients:
Time:
30 minutes
Difficulty:
Easy
Serving Size:
4-6
  1. Half a red cabbage
  2. One large cooking apple
  3. 200ml vegetable stock
  4. 1 cinnamon stick
  5. 1/2 inch fresh ginger root
Preparation:
  1. Chop the cabbage finely
  2. Peel, core & chop the apple into small pieces
  3. Peel & grate the ginger root.
Instructions:
  1. Put the cabbage, apple, cinnamon and ginger in a pan. Add the stock. Cover and bring to the boil.
  2. Stir and simmer for 20 minutes, or until the liquid has reduced and the cabbage is soft.
  3. Remove the cinnamon stick before serving.
