Camembert or Brie mini fondue

Description
I saw this on a TV program presented by Australian cheese impresario Will Studd. He was visiting one of the top Camembert makers in France at the time.
Ingredients
  • 1 small wheel of Brie or Camembert
  • Fresh Garlic
  • Few sprigs of Thyme (preferably fresh)
  • 2-3 Tablespoons of good red wine
Preparation
  1. The best way to do this is to use a Brie or Camembert that comes in a little wooden box, however if you're unable to source this, find an oven-proof bowl that snugly fits the wheel of cheese. Note: you need a complete wheel of the cheese for this recipe to work, as it depends on the outer rind being whole.
  2. This would likely work with any kind of washed rind cheese that you are able to buy whole. I imagine stinky lovers would adore a Blue done this way.
  3. Heat your oven to 160-170°C (320 - 340°F)
Instructions
  1. Take the wheel of cheese out of its box and/or wrapping and cut a few slits in the top, being careful not to go through the bottom rind.
  2. Place the cheese back into the box, or oven-proof bowl
  3. Slice the garlic thinly and shove into the slits (use as much or as little as your taste for garlic dictates)
  4. Sprinkle on the thyme sprigs, shove some into the slits and season to taste with salt & coarsely ground black pepper
  5. Pour the wine gently over the cheese, making sure some gets into the open slits, and the rest sits on top of the cheese
  6. Place your precious cargo into the oven and cook for 15-20 mins until the cheese is warm and squidgy in the middle.
  7. Serve with crusty bread and drink the rest of the wine with your mini fondue.
