My jewish grandmas recipe. Polish/Russian. One of the super easy, simple pleasures of life. This is essentially chicken stock which is good for numerous things. The same technique for turkey soup, use wings and or thighs, and neck.
Other: Ingredients:
Time:
2-3 hrs
Difficulty:
Easy
Serving Size:
N/A
  1. one whole cut up chicken
  2. 2 med carrots chopped 1/2 inch rings
  3. 2 celery stalks and tops, chopped
  4. 1 onion cut in quarters
  5. 4 whole cloves of garlic
  6. 2 parsnips chopped(when in season)
  7. 2-3 potatoes chopped with skin
  8. 1 chicken bouillon cube
Preparation:
  1. you'll need a 5 quart pot
Instructions:
  1. place chicken parts on bottom of pot
  2. add veggies
  3. toss in bouillon cube, salt and pepper.
  4. cover with water
  5. bring to a boil and simmer for about 1 1/2 hrs.
  6. test and see if chicken is cooked through
  7. cool in fridge for 1/2-1 hr
  8. skim fat off the top
  9. leave chicken in whole pieces or shred
  10. before serving squeeze lemon juice over top.
