It's getting more and more difficult for me to drink more than 2 beers
without getting slightly drunk (Yay on getting older ). Anywho,
since I enjoy beer but not the buzz so much, I've been deluting it
with Ginger Ale and a slice of lime - sort of like a 'Panaché'. The type
of 'limonade' used to make a real Panaché isn't sold here so thank you
for this recipe, will be great with beer...

Clear lemonade

I tried to reproduce the taste of Calpis but don't like the taste of yogurt in my drink, even in tiny amounts, despite liking commercially-made Calpis. I haven't tried to make it with milk instead of yogurt.

While trying to make Calpis I discovered that if I leave the yogurt out altogether I get a clear, refreshing, lemonade-like drink, dirt cheap. This is for a lightly sweet, lightly citrus-y beverage. Use more for a stronger taste:

12 oz cold water
less than 1/4 teaspoon citric acid
1 rounded tablespoon sugar

Stir ingredients vigorously. Sugar doesn't dissolve readily in cold water.

I get citric acid in bulk at Whole Foods. At less than 1/4 tsp per serving you don't need a lot of it.

lemons and limes are scarily expensive in the stores now adays. Fortunately we have an abundance of trees. I wonder if you can just buy in bulk when you see them on sale and freeze the juice in the freezer. I bet this recipe would also be great for popsicles.
