Improving a Purchased Cake Mix

Use this if you want to make your cakes a little more firm and moist. It works perfectly for me every time - simply lower the baking temp from 350 to about 325 and extend the baking time a bit. This will also increase your batter amount slightly - so it's great if normal cake mixes just don't cut it in your slightly-oversized pan! This is a trick I learned from an instructor while taking some Wilton cake decorating classes. I used this over the weekend to make a pumpkin cake (in a pumpkin shaped pan) but I added some pumpkin pie spice mix to it (about two tablespoons) and some cream cheese frosting. It was awesome.

  1. Flour
  2. Sugar
  3. Sour Cream
Instructions:
  1. To a normal cake mix, add:
  2. (1) cup flour
  3. (1) cup sugar
  4. (1) cup of sour cream.

Oh, you people are too picky. You don't TASTE the sour cream; it fluffs up the cake and gives it a great texture.

a quick and dirty trick is to substitute full cream milk for any water in the recipe.

Yes, but that also adds a lot of unnecessary fat and calories. It's more of a "pick your poison" deal I suppose

I hate not being able to find REAL YOGURT instead of this lame 2% stuff.

Another tip, though -- plain yogurt can substitute for sour cream in some recipes.
