Oh, you people are too picky. You don't TASTE the sour cream; it fluffs up the cake and gives it a great texture.

a quick and dirty trick is to substitute full cream milk for any water in the recipe.

Yes, but that also adds a lot of unnecessary fat and calories. It's more of a "pick your poison" deal I suppose

Bleu cheese is yummy, but it's definitely an acquired taste.

And Tenshi is right about the sour cream, that's an old standby of my mom's.

ive heard that too...some people put sour cream in pound cake mix to make it better

I hate not being able to find REAL YOGURT instead of this lame 2% stuff.

Another tip, though -- plain yogurt can substitute for sour cream in some recipes.

Improving a Purchased Cake Mix

Time: .5 hrs Difficulty: Easy Serving Size: N/A	Description Use this if you want to make your cakes a little more firm and moist. It works perfectly for me every time - simply lower the baking temp from 350 to about 325 and extend the baking time a bit. This will also increase your batter amount slightly - so it's great if normal cake mixes just don't cut it in your slightly-oversized pan! This is a trick I learned from an instructor while taking some Wilton cake decorating classes. I used this over the weekend to make a pumpkin cake (in a pumpkin shaped pan) but I added some pumpkin pie spice mix to it (about two tablespoons) and some cream cheese frosting. It was awesome.
Ingredients
Flour Sugar Sour Cream
Preparation
No prior preparation is required.
Instructions
To a normal cake mix, add: (1) cup flour (1) cup sugar (1) cup of sour cream.
