Perfect pasta salad

This is a very simple and common cold pasta salad recipe, you've probably seen versions of it elsewhere. I read it somewhere years ago and have made a couple of my own modifications over the years (such as the radishes and corn). My family loves this as a nice summer lunch or dinner.

(It is also good with cold chicken, ham, turkey, whatever you've got, in place of or even along with the bacon)

4 (best served with garlic toast)
  1. 1 pound pasta shells or pasta elbows
  2. 1 packet powdered ranch dressing mix (I've tried it with bottled dressing, but for some reason it really is better with the powdered mix)
  3. 1/2 cup light mayonnaise
  4. 1 can sweet baby peas drained
  5. 1 can sweet corn kernals drained
  6. 2 grated carrots
  7. 4 grated radishes
  8. 1/2 of a red onion, minced
  9. 1 pound sliced bacon
  10. salt
  11. pepper
Preparation:
  1. First cook your bacon, you'll be making homemade bacon bits. Quickest way is to first chop the raw sliced bacon into about 1/4 of an inch sized cubes, or even smaller if you can. Drop the whole pound into a skillet and cook, stirring frequently, until it's nice and crispy. You might want to cook it a little crispier than usual, it will soften some in the salad.
  2. Boil pasta until done, then run cold water over it until it is no longer hot.
Instructions:
  1. Combine pasta, peas, corn, carrots, onion and radishes in a large bowl.
  2. Mix in powdered ranch dressing mix and mayonnaise until ingredients are thoroughly covered.
  3. Stir in your homemade bacon bits.
  4. Sprinkle a pinch of salt and pepper over it and stir until you're sure it's all well mixed.
  5. Cover with saran wrap and refridgerate for one hour at least, until salad is chilled.
  6. And you're done, enjoy.

I'm going to try the powdered ranch. I bet that would be enough to kick up the taste of otherwise pretty neutral pasta and mayo. Thanks!

Thanks, Allana. This inspired me to make pasta salad for lunch. I haven't tried the powdered ranch (interesting idea!), but I like to throw in full-sour, briney dill pickles into the mix for a little extra zip!
