Stuffed Biscuits

Description:
These are just buttermilk biscuits stuffed with yummy meat and peppers and cheese. I like to serve them alongside a salad.
Other: Ingredients:
Time:
About half an hour
Difficulty:
Easy
Serving Size:
serves 4
  1. 1/4 cup brown sugar
  2. 1 tablespoon red wine vinegar
  3. 1 tablespoon Worcestershire sauce
  4. 1 16oz can tomato sauce
  5. 1/4 cup diced red pepper
  6. 1/4 cup diced green pepper
  7. 1/8 cup diced onion
  8. pinch of salt
  9. pinch of pepper
  10. 1 to 1 1/2 pound ground beef (or turkey or chicken)
  11. 1 cup grated monterey jack cheese
  12. 2 cans pillsbury (or generic brand) buttermilk biscuit rolls (if you're not sure what this is, please see link at bottom of post)
Preparation:
  1. Grease (or use cooking spray) a 12 cup cupcake pan and preheat oven to 400 degrees.
  2. Brown the meat until cooked through
Instructions:
  1. In a sauce pan heat up the can of tomato sauce and add in each of the following ingredients: 1 tblsp red wine vinegar, 1 tbsp worcestershire sauce, 1/4 cup red pepper, 1/4 cup green pepper, 1/8 cup onion, salt, pepper
  2. Cook until peppers and onions are well softened and sauce is bubbly.
  3. Pour sauce over browned meat and mix thoroughly
  4. Roll each of the individual biscuits out until it is thin and about 3 times it's previous length and width and use them to line the insides of the cupcake pan (like paper cupcake liners, only with dough) ... you'll have 8 biscuits left over, I just pack these up to save for another day.
  5. Fill each of the dough cups to the top with the meat and sauce mixture.
  6. Place a small mound of the grated cheese on top of each filled cup
  7. Bake in 400 degree oven for 15 minutes
  8. Let sit for a couple of minutes to cool slightly
  9. Remove from tray carefully using two spoons to lift

Sounds much better than Pizza Pockets.

You can make a whole bunch of these ahead of time (also different fillings), freeze them up,
and bring them to work if you have access to a microwave.
Unless you've tried this, and freeze/zap makes them untasty?

Alright, for the Bacon loonies out there,


Scrambled eggs with whatever you want in it...
  • mushrooms
  • cheese
  • fried onions
  • bell peppers
  • bacon or sausage

Spoon the scrambled egg mixture (already cooked) into
the biscuits and bake biscuits according to package directions.

I would sprinkle some cheese on top of the biscuits a minute or two before taking them out of the oven.

I've never tried that simply because I've never had any leftover after my family swarms the kitchen. But I don't see why it wouldn't work fine as long as you zap them in a covered dish so that the steam inside can keep the dough from hardening.

This sounds very yummy, I'll have to try it sometime. I might try it with frozen biscuits. I've been using those in some recipies, I just thaw them on some parchment paper for 40 min-1 hour before I want to use them. The "flaky" variety, thawed and rolled out flat makes a pastry that is so close to puff pastry you won't believe it.

I do this all the time for parties except I use 1 package of Cream Cheese, 1 egg, some cooked bacon crumbled with shredded cheese in the mix and topped with shredded cheese. It rocks!

You do need to use the smaller biscuit types. The big biscuits are just...well...to big lol.
