Easy Enchilada Fake Out

I am eating this now as I type it. It's either a quickie fake enchilada, or it's a plated saucy burrito, it's whatever you want to call it.
Plan it for a night when you have some type of leftover meat, chicken, pork, beef, whatever. I had about a quart size ziploc baggie of pork leftover from a pork roast I did in the crock pot a couple of nights ago.

about ten minutes

Serving Size:
Several or a few, depends how much you make
  1. Red pepper
  2. Green pepper
  3. Shredded pork (or some other leftover meat that is easily shredded)
  4. Picante Sauce
  5. grated cheese (any type, I used jack)
  6. 1 can green chili enchilada sauce
  7. flour tortillas
  8. olive oil
  9. sour cream (optional)
Preparation:
  1. Slice up your red and green peppers in nice long slices, cook them up in a skillet with a little olive oil until they're nice and limp and yummy, however you like them. And set them off to the side for later.
  2. Warm a bunch of flour tortillas by simply flipping them one after another in a dry (no oil) skillet, set them aside and keep them warm by covering them with a towel.
Instructions:
  1. In a skillet drizzle in some olive oil so that it coats the bottom of the pan. Splash in about five or six splashes of picante sauce.
  2. Drop your shredded meat into the skillet and mix and heat until the meat is well covered by the sauce and warm.
  3. In a sauce pan, heat up the canned green chili enchilada sauce until bubbly.
  4. On each person's plate lay out a tortilla.
  5. Fill the middle with meat and a bit of shredded cheese.

  7. Lay your burrito so that the folded sides are down on the plate.
  8. Pour enchilada sauce over the top of the stuffed tortilla until it is covered.
  9. Spoon some of your skillet peppers across the top
  10. sprinkle more cheese over it all
  11. drop a spoonful of sour cream right in the middle if you like sour cream.
  12. Yummy yummy!

Yea my daughter looked at it and called it a "restaurant style burrito".
