Post your easiest 'bachelor' style recipes.

I just got through eating the leftovers from my last batch of roast and posted the recipe. That stuff is super delicious. Just falls apart on the fork, and if you double up on the soup/soup mix, you end up with enough gravy for rice/potatoes, etc.

Hardly a 'recipe' really, but got me to thinking about the bachelor style (think super easy, 4 or fewer ingredients) foods I often make. I tend to make these in family or larger style quantities, meaning lots of leftovers, and overall, being very economical.

Decided to put forth the rallying cry for more of these type of recipes. Let's hear your favorites!

Oh, and if you're a bachelor/bachelorette, or, just like really easy cooking - do yourself a favor and go and get a crockpot. Some of the easiest, most delicious cooking you'll do

I made omelettes for dinner, doing the "breakfast for dinner" thing is quick, and it can also be a decent way to save cash.

1 lb ground beef or ground turkey
1 can tomato soup
Mashed Potatoes (instant or leftover or whatever)
Green Beans
Shredded cheese.

Brown ground meat. Drain (and rinse if you are weird like me about beef fat like me). Put into casserole dish. Mix in 1 can of tomato soup. Layer a can or 2 of green beans. Pepper and Garlic powder would be nice now. Spread mashed potatoes. Use that pepper again. Layer cheese. Cover with foil and bake at 350 degrees F for half an hour. Take off the foil and put it back in the oven for about 10 minutes.
Cool slightly if you can and devour at will.

I figure if there are more than 3 steps, then it doesn't count as bachelor food.

1. Open box
2. Microwave stuff
3. Eat

Of course if you are able to skip step 2 then it's much better.

Lazy person's fried rice:

ingredients
a little oil
soy sauce
a non-stick pan
left over rice
package of frozen peas and carrots or french cut green beans or both
hot dogs

1. Heat oil in the pan till it's about to smoke
2. While oil is heating, cut hot dogs into small pieces - little half inch cubes are good, but whatever's bite sized is good, since this IS a lazy person's dish
3. toss the hot dogs in the pan till they're kinda nice and seared
4. toss your frozen veggies in the pan (you could run them under water to thaw'em first if you're not too lazy) if they're frozen, make sure you cook'em extra long
5. liberally shake the soy sauce bottle at it
6. fry it a little
7. once you're sure nothing's frozen anymore, toss in the rice
8. add more soy sauce
9. once everything's mixed up, you can eat.



ooh, I forgot ppl can eat eggs (unlike me), so you can add a step in there before you add the rice where you push everything to one side and crack an egg and scramble it.

ETA: If you thaw your veggies, try to dry them a little before tossing them in hot oil - otherwise it gets kinda hazardous standing near your stove...

Here's another:

1. Wrap 4-6 Boneless Skinless Chicken Breast (depending on size) in two pieces raw bacon each.
2. Mix 16 oz. sour cream and 1/2 cup white wine to make sauce to pour over breasts completely in 9x13 pan.
3. Bake in 375 degree oven for about an hour.

Another one that just falls apart - not sure what it is about me and disintegrating food The sauce is good, and you can finish off the wine with the meal.

Some of the above sound delicious, but, they seem to involve, you know, effort You gotta understand, as a bachelor, I'll cook a frozen pizza directly on the rack, then use the box it came in as a tray to eat it off of. Poof! No cleanup.

Get some cubed (beef) steak. Place into gallon size ziplock. cover steaks w/ half white vinegar half cooking oil. Add sliced onions, peppers if desired. Throw in spices (salt, pepper, garlic, adobo etc) to taste. zip up the bag. squish the ziploc around a bit to mix all the ingredients. Place in fridge for a few hours or couple of days. When ready to cook, dump into frying pan and fry (boil almost) till cooked. Great over white rice and awesome in a sub roll....you can dip bread in the drippings for artery clogging delight!

Great thing is you can prepare several of these packages and freeze 'em so you can cook them at a later date.

3-4 extra thick cut bonless pork chops
1 carton sliced mushrooms
1 onion, quartered
1 can cream of mushroom soup
garlic pepper
couple tablespoons of cooking sherry, if you have it. If not, it won't matter much or you could probably use wine.

Mix soup & sherry. Place pork chops, mushrooms & onion in casserole pan. Pour gravy over and sprinkle with garlic pepper.

Bake at 375. Usually takes 35-40 minutes depending on thickness. Gravy is good over rice or potatoes.

Speaking of crock pots...

1 family-sized pack of boneless chicken breasts
1 16 oz. bottle of salsa (I like chipotle salsa for this)
1 cup of water
1 level teaspoon chicken bouillon

Trim and rinse the chicken as per usual. Mix the bouillon into the water, and then throw everything together into the crock pot (give it a good stir so the liquid is evenly distributed amongst the chicken). Cook on low for 7 hours. Grab a pair of forks and shred the chicken in the crock pot. Ignore the plaintive wails of your cat driven mad by the aroma of chicken. Let it cook another hour. Serve on rice. Cheese and/or sour cream optional.

Generally you can get five or six meals from this.

4-5 potatoes, cubed into 2 inch blocks
1-2 onion, chopped/food processed
infinite garlic (to taste, really, but you can NEVER have enough garlic)
olive oil
any spice you want

heat olive oil up, toss olives and garlic and potatoes into pan, cook until... potatoes are soft. Pile into bowl. Eat.

For extra fancy, dump in a bunch of curry powder and yogurt once it cools a bit (so the yogurt doesn't cool). Voila! instant curry.


That "recipe" got me through my first semester of college away from home. I reeked of garlic and onions.

At the moment, throw a French bread pizza into the oven and wait a 1/2 hour.

Yesterday, getting more complicated, throw a potato in the oven for a while and then put a bunch of sour cream and butter on it.

Even more complicated, but one of my favorites. Boil some spaghetti, pour some spaghetti sauce on it, cook some hamburger and mix it in. Pour a bunch of red pepper and parmesan cheese on it, microwave and eat.

Burritos - cook some hamburger again and fry the shell in some olive oil. Add cheese, sour cream. Microwave and eat.

Salad - get some pre mixed greens, add some chopped onions, cheese, red beans, dressing and plenty of black pepper.

Somehow I don't think anyone is going to hire me as a chef.

grilled veggie salad

1 can chick peas
A bunch of baby spinach greens
1 zucchini
1 red bell pepper
1 yellow bell pepper

1. Sear the chick peas in a pan on high heat. Don't cook them, just add that delicious color.

2. Slice the zucchini into bite-size morsels and sear them (again, don't cook them through... just add that delicious brown to them).

3. Chop the peppers and sear those, too.

4. Drop a great big pile of baby spinach geens to the pan and wilt them.

5. Combine all of the above in a big bowl.

6. Make a vinagrette dressing: lime juice, vinegar, olive oil, dijon mustard (an emulsifier), garlic, spices to taste. Pour on the salad.

7. Chill in fridge for several hours. The veggies will soak up the vinagrette during this time. Stir occasionally to expose the veggies to the dressing.

8. Eat.

My favorite snack.. I usually have the makings on hand.

1 c. cooked rice (I prefer brown)
1/4 c. refried beans
3-4 generous spoonfuls of chunky salsa
handful shredded cheese

Put rice in bowl, add beans, add salsa, cover with cheese... microwave for about 1-1/2 minutes, stir - devour.

Marinated black-eyed peas.

Traditional New Years Day dish in Texas, but I love it in the summer.

1 can black-eyed peas, drained and rinsed
1 minced onion
lots of fresh garlic
hot peppers or hot sauce to taste
Enough Italian dressing to make it a bit wet, but not too sloppy

Refrigerate overnight. Stir if you think about it.

Really good when all you want to eat is cold stuff in the summer.

(youll need a french loaf with garlic butter etc.. which you can buy, make or steal)
leftover chicken (if there is any) shred with fingers.. pick off the bones etc
(you could boil some chicken breasts if theres no leftovers)
mix together ..
half cup yoghurt.. half cup mayonaise.. curry powder to taste..
add the chicken..

dissect a lettuce into leaves... put dollops of the chicken sauce mix into a lettuce leaf.. roll it up.. stuff into your mouth.. fill any spaces with hot garlic bread.. chew.. swallow.. repeat ...

I enthusiastically agree. I almost always have some cooked brown rice on hand (I like brown because it holds up better to reheating).

I eat it as cereal, or stir in a bit of peanut sauce and slice a scallion on top, or sometimes just with gravy.

Couple of pounds of mushrooms, cleaned and sliced
small onion, chopped
lots of garlic
fresh-ground pepper
some butter
homemade mashed potatoes

Saute the onions and mushrooms in butter until tender and delicious, season with garlic and pepper. Sometimes I add a bit of beef boullion. Thicken with a bit of cornstarch & water. Serve over mashed potatoes.

curry powder
butter

Saute cabbage in butter until just done adding curry powder to taste while cooking. This is really yummy - and oddly, low carb (if you care)

Curry paste that you get in Indian grocery stores is outstanding too - you won't go back to powder.
