Best Chicken Ever!

My daughter is a very finicky eater. One of the few meat dishes she likes is chicken, but it gets old trying to think up creative ways to make it, only to have her politely eat a few bites and try to toss the rest without hurting my feelings.

At the store the other day, I saw a bottle of cheap honey mustard bbq sauce, just store brand. I thought what the hell, it'll be easy at least.

All I did was bake some chicken thighs with the sauce poured over them, then stick them under the broiler for a few minutes to crisp up the outside a bit.

She just went back for seconds!!! She almost never goes back for seconds of anything. She said it's "really good". She's right too, it turned out pretty yummy.

Your daughter sounds like mine. Chicken is pretty much the only meat she eats, aside from turkey. Once in a very, very great while, she'll eat shrimp. Amazingly, she goes out to eat with her grandparents at Carrabbas and eats fried calimari

I can always get her to eat roast chicken, barbeque chicken, fried chicken (of course, only the white meat except for the rare occasion that she decides to eat a drumstick) and breaded chicken tenders (which my husband, the trained chef) makes himself.

She loves Hawaiian chicken, which is basically just a pound and a half of chicken breast cut into bite sized cubes, coated in flour and browned. Then, I use a jar of Ragu Marinara Sauce, a large can of pineapples cubes (add to the tomato sauce a half to 3/4 cup of the juice) a tablespoon of brown sugar (more or less to taste) a half teaspoon of ground ginger and a half teaspoon of garlic powder, a cup of chicken broth and salt to taste. Add the chicken and the pineapple chuncks and let simmer for about 30 minutes. I don't follow the recipe exactly, I tend to add more pineapple juice as it cooks down, depending on how it's thickening up. If it doesn't thicken up enough, I add a little wondra flour. Usually, the flour on the chicken makes it thicken enough.

I serve it over white rice. If you like green or yellow peppers, you could add those with the chicken and pineapple. My daughter doesn't like peppers. If you have time, make it a day ahead. The flavors have more time to meld together and it's yummy!

It's important to use a marinara sauce like Ragu. You don't want any beef flavor or any big chunks of tomato, garlic or onion. The smoother the sauce, the better really.

I think I'm going to make this this weekend hehe. I'm going to try yours next weekend when my stepson is with us.

I can't stand how picky the kids are, but I guess in my daughter's case, I created the monster.

I use those sprayer salad dressing thingies for chicken a lot. Either Balsamic, Caesar, or Italian. Just spritz every few minutes as you are baking, roasting, or grilling.

I use them all the time for cooking, plus they are great for spritzing sandwiches, too.

A good quick chicken dish:

1 lb boneless chicken breasts
3 bell peppers - 1 ea. red, green, yellow
1 jar your favorite salsa

Cut peppers into strips. Cut chicken breasts into serving size pieces as need be. Toss everything in large skillet. Cover and cook until chicken is done. Serve with rice.

I am most apt to do this in the summer when I can get peppers at a reasonable price, even the purty color ones.
