What are you cooking for Easter Dinner?

Although we don't celebrate Easter in a religious manner, I do like to welcome the beginning of Spring with a celebration and Easter seems the best day to do that.

Tonight I have friends coming over and I'm making a traditional ham with cloves and pineapple, rice with noodles (a family recipe), asparagus, brussels sprouts, home made bread and a pineapple upside down cake (that just looks awesome).

Before dinner we will by dying eggs and hubby will judge the best egg.

Thread Title of the Week 
Sounds wonderful! Especially the egg dyeing part.

I'm not making Easter dinner, having just got back in town yesterday, and feel a tad guilty and unglued about it. I do have an Easter gift for all three kids (that includes the son-in-law) though, which is their favorite thing these days - money!

My husband got the idea of hiding the money in those empty plastic eggs, one color for each ($25 each total) and they have to find them. We told them there was a surprise, and that it would be more fun if they could all three do it together - so it just depends on if and when they get their act together for that.

Plus we have friends in town cause their new grandbaby was just born, on Thursday, I think, and is in ICU (he should be all right, but he will be there a few days), so we have been kind of on hold about that. They should be coming by in a couple hours.

I have a roast beef, and I'll roast some carrots,zucchini, sweet potatoes, onions and whatever I have. I just use olive oil, rosemary, and garlic. And put everything over a bed of baby spinach. Don't know what I'll do for dessert. We still have cans of pumpkin, so maybe some pumpkin, orange cookie.


Your menu sounds really yummy. Sounds like we're doing fall still though haha. But who cares.

I think you have given me my idea for next year Coco! I love the idea of hiding cool trinkets in those little eggs and then hiding them around the yard for my friends to find.

We are having...

A ham that has been cooking since 8 am (will go all day) @ about 200 degrees, covered in brown sugar, honey, pineapple and cherries.

Fresh potato salad that got made about 30 minutes ago.

Deviled eggs.

Zucchini, pan seared in olive oil, fresh garlic and sea salt.

Homemade spinach dip with Seattle sourdough.

Green bean casserole.

Fresh corn on the cob.

For dessert...three layer Hawaiian cake (white cake, pudding layer with fresh pineapple, fresh whipped cream with toasted coconut), and scratch-made old fashioned vanilla pudding.

I am saving up my appetite all day for this, after which I will fall into a deep coma for three days.

I ate a doughnut from Krispy Kreme, which I never do, but gods they are good and had a way too strong espresso! *wheee* Now I'm all buzzed out. Happie Easter to me! ...Later if RL has time, we will make a garlic pork loin w/ pasta and sauteed apples. Then we go back to eating cereal, salads and sandwiches all week, 'coz we don't live together, but hopefully will be in Feb again, and no we didn't meet on SL, I corrupted him and brought him into SL.

We don't do anything special for Easter here but we did have a good traditional Sunday meal which we don't always bother with. This was roast beef, roasted potatoes, roasted veg (carrots, parsnips and leeks, garnished with rosemary), horseradish mash (that's mashed potato flavoured with horseradish) and Yorkshire pudding. The beef joint was huge and there's still more than half of it left over so I guess we're having beef tomorrow too :-D

We had some very yummy marinated sweet and sour pork tenderloin with scalloped apples, some potatoey side dish, candied carrots and broccoli ....

Was very nom

Oh....and the rest of the day pretty much consisted of chocolate, lol.

You know what's weird? I'm not religious, but my parents are out of town on sabbatical at Easter for the first time. They've been gone for my birthday most years, and Christmas once. But I found myself missing the event of the family gathering a little bit today, because I relate it to the beginning of spring... and this year, I'm really looking forward to spring, hoping our house sells! It was a good day though, we got to hang with Surreal for a bit.

I apparently wasn't enthusiastic enough in my earlier post to suit Sans, so here is v.2.0:

We had a wonderful, moist, 18 pound turkey, homemade mashed potatoes (which I dutifully skipped), gravy, an incredible cranberry sauce with mandarin oranges, a very delicious stuffing, my mother-in-law's homemade bread, kernel corn and a marshmallow fruit salad. We are now watching Harry Potter #1 whilst waiting on strawberry shortcake for dessert.

And it was SOOOO GOOD!

Made the rounds for family gatherings today.

Lunch for my Dad's side hosted by my parents:
Ham
Beef and Noodles served over mashed potatoes
Homemade potato salad
Home grown corn (frozen in the summer)
"" green beans
fresh fruit, fresh veggies, assorted rolls
Deserts: Cherry crumb pie, cheese cake, assorted other pies.

Dinner at my grandma's for my mom's side
Pulled pork BBQ sandwiches
Mac and cheese
more corn
assorted salads and veggies
Desserts: White and Chocolate cake (we had a birthday too), Carrot Cake, Snickerdoodles, strawberries and vanilla ice cream.

And I didn't have to cook a thing.

Also, total easter eggs found by my kids = 167
