Duke's Light Waldorf Salad
For some reason Duke couldn't get this to post, so I'm trying for him. Dunno about you, but this sounds absolutely yummeh to me.
In the summertime (which is a nice time I have read), I make a lot of salads. I know I know, by looking at me you wouldn't think I had ever even seen lettuce but I haz. I made a big batch of Waldorf Salad today and thought I'd share my recipe.
1 20 oz can of pineapple chunks drained
1/2 cup celery chopped
1 medium apple cored and chopped (I prefer golden delicious for the flavor and color)
1 cup red seedless grapes
1/2 cup toasted walnuts
2 or 3 kiwi fruit peeled and chopped
1/2 cup light mayo or salad dressing
6 oz lemon yogurt
1 tbsp honey (I prefer clover)
lettuce leaves (optional)
In a big ol' bowl gently toss the pineapple, apple, celery, grapes, walnuts and kiwi. In a small bowl stir together mayo, honey and yogurt and fold gently into fruit. Cover and chill for 2 to 24 hours. Makes a bunch about 8 servings or so.
I serve it over big fresh Romaine leaves.
