SL Join Date: July 29, 2006 | Duke's Light Waldorf Salad For some reason Duke couldn't get this to post, so I'm trying for him. Dunno about you, but this sounds absolutely yummeh to me. ![]() In the summertime (which is a nice time I have read), I make a lot of salads. I know I know, by looking at me you wouldn't think I had ever even seen lettuce but I haz. I made a big batch of Waldorf Salad today and thought I'd share my recipe. 1 20 oz can of pineapple chunks drained 1/2 cup celery chopped 1 medium apple cored and chopped (I prefer golden delicious for the flavor and color) 1 cup red seedless grapes 1/2 cup toasted walnuts 2 or 3 kiwi fruit peeled and chopped 1/2 cup light mayo or salad dressing 6 oz lemon yogurt 1 tbsp honey (I prefer clover) lettuce leaves (optional) In a big ol' bowl gently toss the pineapple, apple, celery, grapes, walnuts and kiwi. In a small bowl stir together mayo, honey and yogurt and fold gently into fruit. Cover and chill for 2 to 24 hours. Makes a bunch about 8 servings or so. I serve it over big fresh Romaine leaves.
