| Grilled Beef Sandwiches 1 lb ground beef or sirloin
1/2 to 3/4ths of a small onion, diced finely.
1 cup of mushrooms, sliced
4-6 slices of bacon
1 tablespoon butter

Step 1: Cook the bacon to your preferred state, and dice it into bacon bits.
Step 2: Drain all but a tablespoon of the bacon fat from the pan. Toss in the onions, and cook just for a few minutes, until they're just going towards translucent.
Step 3: Add the ground beef. Cook until almost done. Season to taste. I usually use fresh ground black pepper, some celery salt, a tiny bit of garlic powder, and sea salt.
Step 4: While the ground beef is cooking, saute the mushrooms in the butter.
Step 5: When the mushrooms are just a minute or so from being done, toss them in with the ground beef & onions. Also, at this time, add the bacon bits. Stir to combine, and let all the ingredients come together and finish cooking.

You now have the basic Yummy Meat Mixture. It keeps beautifully in the fridge. You can make Grilled Sammitches of happy goodness (see below), and then still have enough to add to the inside of a lovely omlette the next morning...
- Take two pieces of bread. Butter the outsides.
- Lay a piece of cheese (your preference: I like Swiss, hubby likes - American or Cheddar) on the inside of each piece of bread.
- Carefully heap about 1/2 cup of the meat mixture on the bread.
- Put the other piece of bread and cheese on top, and grill in a George Foreman Grill or panini press.
- Devour. |
