| soy milk is not junk food if you make it yourself. What makes it junk food is all the sugar and other crap they put in it. But the less of that crap they put in it, the weirder it tastes. But you do get used to it.
making it yourself is a pain btw.
Also both of those articles that were linked talk about the evils of pre-processed buy-in-the-store soy milk -- the same is true of rice and almond milk you buy in the store. So if you want good vegie milk, you are going to have to make it yourself. Almond or soy is almost sure to have way more protein than rice milk.
For a no calorie sweetener, try stevia. Stevia is a plant that when seeped in water makes the water taste like it has sugar in it. Its kind of like tea only it has no caffeine. You can get some at your local health food store -- probably dried, which is fine -- I grow my own but its a little late in the season to start that now. Take some of your water (probably half?) and seep the stevia in it before making your milk. This might take a few tries to get right. Or you can just add stevia to the grain/bean/nut and water mixture. Again it might take a few tries to get right.
There is nothing wrong with any of the vegie milks except that when you buy them in the store they have "stuff" in them that make them less than healthy.
